Quick Quesadillas

This is a really simple and really delicious snack using just 4 ingredients found in any local grocery.
Serves 1-2

  • 2 tortilla wraps
  • Tomato relish
  • Grated mozzarella cheese
  • Chicken breast pieces (for the one pictured, I used Tesco chicken tikka breast pieces)
Method
  1. Pre-heat a dry frying pan over a medium-low heat.
  2. Spread relish on both wraps.
  3. Top one wrap with chicken and cheese and place the other wrap relish-side down on top.
  4. Carefully transfer to the frying pan (I actually make the quesadilla on a pizza tray and slide it on to the pan)
  5. Dry fry for a few minutes on each side until golden brown.
  6. An alternative method is to half cover a wrap with the toppings, fold it over and either dry fry it, or pop it in the George Foreman, if you have one.

There are so many possibilities with this recipe. Use Cajun or Szechuan chicken instead of tikka. No mozzarella? Cheddar is just as good. Swap the tomato relish for a zingy jalapeño relish, red onion jam, a flavoured chutney or even pizza sauce.

Beanless Chilli

I’ve always thought that kidney beans are the ruination of a good chilli, so here’s my recipe without them.

Ingredients
  • 1 lb / 450g minced beef
  • 1 large onion
  • 1-2 cloves garlic
  • 1 tsp ground cumin
  • 1 tsp mixed herbs
  • 2 tins chopped tomatoes
  • 1 red chilli pepper, chopped or 1 tsp minced chilli
Method
  1. In a saucepan, brown and break apart the mince over a medium heat.
  2. Add the onions and crushed garlic and fry for a further 2 minutes
  3. Add the cumin, mixed herbs & chilli and mix well.
  4. Add the chopped tomatoes, bring to the boil & simmer for 1-2 hours with a loose lid on a low heat.

You can also spread this evenly in a casserole dish, top it with creamy mash and sprinkle with grated cheese for a delicious chilli shepherds pie or simply serve in a fluffy baked spud!
